Delicious Food Mutabbaq Recipe

You brought me back so many childhood memories. I grew  up in South West Saudi. Not far from Yemen.  The food there is very similar.  Indeed all the restaurant chefs there without exception were from Yemen. 

I used to love Fuul, shakshoka and zerbian rice.  But my favourite of all was Mutabag. I tried your recipe the other night and it came out good. I made the dough slightly wet so it was very fragile when rolled thin. I need to adjust they next time. 

Delicious Food Mutabbaq Recipe

Yield  :  8


  • 2 ,5 cup  plain flour
  • 5  tablespoon cooking oil
  • 3/4   tsp salt
  • 1 1/4  cup or more warm milk 


  1. Place   flour and salt in a mixing bowl.
  2. Add in oil and  milk  gradually to form into soft dough. Knead for 5 minutes Keep  covered for  2 hours 


  • 3 big red onion sliced
  • 1=2  tablespoon  chili powder
  • 1  tsp turmeric powder
  • 2 tin x 185 g tuna drained
  • 5 cloves garlic minced
  • 2 capsicum thiinly sliced
  • salt to taste
  • 2 tablespoon oil
  • lemon juice
  • 2 eggs lightly beaten


  1. Heat the oil, add in  onion.  fry until  translucent . Add in  garlic.
  2. Add in tuna and capsicum, sprinkle chili, salt . little water  and turmeric powder.
  3. Stir for 2-3  minutes,  add in lemon juice, remove and cool.
  4. Add beaten eggs to the filling when you are ready to  make the mutabbaq.


  1. Divide dough into 8 equal balls.
  2. Roll out each ball on well floured  surface into very   thin circle about  10  in diameter.
  3. Spread about 2 tablespoon of filling evenly. .
  4. Fold in four sides , like an envelope.   Complete the rest of the dough.
  5. Carefully place the dough onto heated pan, drizzle some  oil and flip.   Cook until it turns golden brown on both sides.
  6. Remove with slotted spoon and drain on  kitchen towel.
  7. Serve hot.
