Texas Sheet Cake Cookies

My whole extended family is from Texas and I know they’d give these cookies a big thumbs up!

This is the perfect cookie! I can’t wait to make this. Texas Sheet cake is my absolute favorite.

Texas Sheet Cake Cookies


INGREDIENTS

FOR COOKIES:

  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup chocolate chips, melted
  • 1 1/3 cup flour
  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup (1 stick) butter, softened
  • 1/3 cup brown sugar


FOR FROSTING:

  • 1 tsp vanilla
  • 2 1/2 cups powdered sugar
  • 1/2 cup ( 1 stick) butter
  • 2 TBSP unsweetened cocoa powder
  • 3 TBSP milk


INSTRUCTIONS

FOR COOKIES:

  1. Preheat oven to 350 degrees. Line a cookie sheet with slip mats/parchment paper or grease lightly with non stick cooking spray.
  2. In a bowl, whisk together flour, baking powder and salt. Set aside.
  3. In a mixing bowl, beat butter and brown sugar until fluffy. Add in egg, vanilla and melted chocolate. Beat until combined.
  4. Gradually, add in flour mixture and mix until fully combined. Your dough will be thick.
  5. Drop dough, by the tablespoon, onto prepared cookie sheet.
  6. Bake 8 minutes or until set. They will be soft..don’t over bake.
  7. Let cookies sit on cookie sheet for 5 minutes before removing.
  8. Then, cool on wire rack completely before frosting.


FOR FROSTING:

  1. In a saucepan, melt butter with cocoa powder and milk until smooth.  Remove from heat and whisk together with powdered sugar and vanilla until smooth.
  2. Spoon frosting over cooled cookies and let frosting set before serving.
